So this is a way late response. I never used toothpicks to secure cabbage rolls and they were always fine. Don't worry so much. :) I haven't made them in a couple of decades, though.

So I have a couple of turkey legs, skin on. I'm thinking of roasting them, perhaps brining them first with salt, chilli powder, and garlic. But I'm also open to suggestions or ideas. So, suggestions or ideas?

A couple of weeks ago chicken quesadillas sounded good. Having never ordered them at Chili's, I really didn't know how to make them, but what I did was cook some chicken and shred it, and then stir in some salsa fresca. Then I took flour tortillas and put one on the griddle, put the chicken mixture on half of it with a little cheese, and then folded it over and flipped it. Once both sides were crispy, they were done!

I made them the first time without folding the tortilla over, covering the whole thing and topping it with another one, but they are kind of hard to flip that way without losing a bunch of filling. I guess if it had a lot of cheese it would hold together, but I really only use a little bit. Chris loves them, and I usually just eat the chicken and salsa part, and it's good, too.

You know those uncooked tortillas you can buy at Costco? One of our new favorite things to do is make little pizzas out of them.

Preheat oven to 500 F
Place uncooked tortillas on cookie sheet on middle rack and bake for 2 minutes (you don't have to flip the tortillas).
Take tortillas out and put on pizza sauce and your favorite pizza toppings.
Put back in the oven and cook for 3-5 minutes. Watch it carefully so it doesn't burn.

The other day I did it a little differently. I cooked the tortillas in a frypan on the stovetop, then I put on the pizza toppings and a lot of extra cheese. Then I put pizza sauce on a second tortilla and placed it on top of the other one like a quesadilla. Then I cooked both sides in the pan with some olive oil (again, like a quesadilla), and boom! the pizzadilla was born. I'm sure I'm not the first person to ever do this, but it was dang tasty.

For pizza sauce we just take some canned tomato sauce and add in garlic salt, oregano, Italian seasoning, and sometimes some red pepper flakes.

BBQ Chicken Marinade:
From my daughter-in-law

¾ cup soy sauce
1 cup oil
1 tsp. horse radish
1 tsp. garlic salt
2 ½ cups 7-up or sprite

"This makes quite a bit of marinade, so I usually half it since I don't make large quantities of BBQ chicken. The chicken always seems to soak this marinade up quick, so you only need to marinade it for 2 1/2 or 3 hours. If you do it for much longer, it will be WAY too strong."

I haven't made it yet, but hers was really good. I'm hesitant to buy horseradish, because I hate hate hate it, but I couldn't taste it specifically in the chicken. Come to think of it, I never have 7 Up, either. I wonder how it would taste with Fresca?
